The Ordre des Canardiers participated in Duclair’s Duck Festival in order to promote Rouennaise Duckling. The numerous visitors were given the opportunity to see 2 demonstrations, performed by Master Canardier Gilles HAUVILLE, Founding Member, and Master Canardier Arnaud GENTY, Chef-owner of “Le Parc”, in Duclair, who brought his own press. Vice-President Philippe DUJAY gave the details of the recipe and, as usual, the numerous visitors were offered a sample of the dish.
On the market-place, one could see various species of ducks, preciously kept in their cages, to protect them from bird flu.
