Today, the Ordre des Canardiers is mourning more than a friend, a family member. For over 35 years, Gérard was among its most dedicated members, as a Vice-President since 1994. We knew we could always rely on him. Should a problem appear, he would say : “Don’t worry, we will figure it out”. With great humanity, generosity and a keen sense of hospitality, he was always present, whenever he was able to. The Canardiers were a part of his life and Betty’s. We will always remember our meetings at “Le Rouennais” restaurant where we were always warmly welcomed.
He always displayed the same enthusiasm when he shared his knowledge of the recipe of Rouennaise Duckling, whether it be with the general public or young apprentices in vocational colleges or in his own company. His commitment with the Canardiers led him to participate in numerous activities such as the demonstrations at the Paris Farm Show or in countless local events. 
For example, I remember he drove to the Oise Département and back, on a Saturday night, just to perform a demonstration. He also collaborated to the organisation of culinary competitions such as the Canardier Cup in Training Colleges. 
Likewise, he was pleased when other restaurants in France or abroad added our recipe to their menus. As a result, he enjoyed the visit to “Les Grands Buffets” in Narbonne with other members of the Board in order to induct the owner and the chef. Gérard also took part in missions abroad when his professional responsibilities made it possible : he travelled to Florida for the opening of the Consulate and he was also among the eight members who participated in the unforgettable trip to Canada for a visit of Montreal and Quebec. We were sorry that his health prevented him from accompanying us to other destinations, such as Chicago.
Even though his health was deteriorating, he did his best to join us as long as possible. For example, he was present at the New Year Cocktail in late January and he also attended this year’s first meeting of the Board. 
His passing leaves us bereft of a great professional. Still, as he was able to instil his sense of service and commitment in his team of Master Canardiers, this spirit will doubtlessly live on. His star will keep shining bright above us.

The Ordre des Canardiers : Rouen's culinary tradition and transmission

Created in 1986 on Michel GUERET's initiative, the Ordre des Canardiers aims to save our cultural heritage, specifically culinary art, by enhancing and promoting the recipe of Rouennaise Duckling. The Master Canardiers, professional caterers, ensure the recipe is taught in restaurants and catering collleges. The Lady Canardiers and Gentleman Canardiers, connoisseurs and defenders of this cultural heritage, ensure it is promoted.
