One of the Canardiers’ missions consists in passing on the skills involved in the recipe of Rouennaise Duckling to future chefs. This is why on April 2nd they signed a partnership contract with Canteleu’s Lycée Georges Baptiste in order to provide the training  of future Junior Master Canardiers every year. This convention comes after the one signed last year with the Lyfe Institute (formerly École Paul Bocuse) located in Lyons.

This ceremony took place during a Canardier evening organised by the school and which gathered about fifty guests, including ten members of the Ordre des Canardiers. The meal started with an Œuf Parfait served with Morel Mushrooms, followed by Rouennaise Duckling, with a demonstration of the recipe in front of the guests. Last but not least, the guests were served a Pear poached in red wine.
