The Salon Gourmand at the Rouen Exhibition Centre

There is no better place than the Gourmet Fair to present and promote Rouennaise Duckling. This fair traditionally takes place in Rouen’s Exhibition Centre in November and gathers a good many producers who bring such produces as wine, charcuterie, cheeses, pastry, chocolates... It is also an opportunity for the visitors to attend culinary demonstrations. The Ordre des Canardiers has been a partner of this fair for almost 20 years by organising a daily demonstration for the visitors and there is even a special one for the exhibitors, early on Sunday morning. Each demonstration is attended by 25 people, who are seated facing the Master Canardiers who carve the duck, press it and use the blood for the sauce. This year, the 4 demonstrations were achieved by Pierre GUERET and Julien MARCHAL-GUERET, Thierry DEMOGET, Élodie FAUQUET and Jean-Paul LAVISSE, Gilles HAUVILLE, Jean-Paul LAVISSE and Victor PAPEIL, the latest winner of the 2020 Canardier Cup for Catering Colleges. After the demonstration, each visitor is offered a sample of duck with some sauce and they can have a chat with the members of the Ordre des Canardiers.
